Char Siu today - I said some time ago I'd write more about it (see 14th January). According to Wikipedia, Char Siu Pork was voted number 28 in CNN's poll of the world's most delicious foods. I checked the CNN poll and couldn't find any mention of Char Siu at all - there was Peking Duck but surprisingly nothing else from China made the list. Perhaps Chinese food is just too diverse a thing to have any one special dish come to the fore, perhaps people just think of Chinese food as a whole as opposed to individual dishes, not the vast array of deliciousness it actually is.

Even more surprisingly, there are 3 British foods in the list (4 if you count Ireland) making the British Isles one of the culinary highlights on a tour of the world. Number 42 on the list, buttered toast with Marmite, may be a little too much for some though.

As is common with the internet, there are loads of websites saying the same as the Wikipedia entry without actually checking the original source - when I did my previous blog, I found people had nicked entire pages and put them on their websites without any reference or a thank you. I might start putting dubious statistics in my blog just to see if I can spread a lie. Spread it thick too, just like the butter on your toast before you scrape a sliver of Martmite (truth) on top.

So how was the char siu? Isis said something along the lines of "This is delicious - ten thumbs up and no thumbs down, can we have this again?" She then ate almost a whole pork loin steak and some noodles. Praise indeed.

Not praise for me of course, I didn't invent it. Have a go, it's really easy to make and one of the best ways to cook pork there is. The spicy aubergine stew was really good as well.

  • Stewed Aubergines

    Ingredients*

    Char Siu Pork Loin
    Pork Loin Steaks
    1 TBSP Garlic and Ginger Paste
    2 TBSP Soy Sauce
    1 tsp Five Spice Powder
    1 TBSP Honey
    ½ tsp Red Food Colouring (Powder)
    ½ tsp White Pepper
    Stewed Aubergine
    1 Aubergine
    ½ Onion
    1 TBSP Peanut Oil
    2 tsp Loaganma Chilli and Peanut Oil
    1 TBSP Shaoxing Rice Wine
    2 TBSP Light Soy Sauce
    1 TBSP Oyster Sauce
    1 Cup Chicken Stock
    ½ tsp White Pepper
    1 tsp Cornflour


    Preparation

  • Pork: Mix everything together to make a marinade for the pork. Smother the pork and leave refrigerated for at least 8 hours. Get the oven really hot. Wipe off excess marinade and cook the chops until just starting to blacken.
  • Aubergines: Fry the chopped onion, then add the aubergine cut into chunks. Fry for a little longer then add everything else except the cornflour. Simmer for 20 minutes then mix the cornflour with a little water and stir in to make a glaze.
