To prepare ye horse:
First, if ye horse to be killed, make sure to collect ye blood such that a boiling haggisse of
horse may be mayde. If ye horse be dead from scrafulus or maynge, be shure to scarf ye
flesh and discard ye blood as this is fowled.
Ye vitals are of sourness and should be taken from ye corpse for ye hounds and swine. When
ye horse is cleaned, pack ye innard with much forcemeat of prunes, hippocras, gynger, sweet
nutmegges, bread which is stale and many gallons of egges of ye turtle.
Into a pyt put ye horse and cover with dirt. Make a smoking fyre atop ye pit and cooke ye
horse there for two days.
Ye horse is served for holy days, festives and executions.

As everyone is going burger crazy, I thought we'd have burgers too. We made our own of course - sadly no horsemeat.
It was really easy and took minutes. The burgers were absolutely delicious.

How to make a really excellent burger – Firstly get some good meat. I don't think you need to go as high
as wagyu but some good ground steak is essential. Many people think you need something to bind your
burger together – breadcrumbs, egg, horsehair. If the meat is cold it won’t need anything.
Get it out of the fridge, mix in some seasoning (salt and pepper is fine, but I used Dunn’s
river all purpose seasoning – about 2 tsp for 450g (1lb) of meat). Roll into balls and bash
into shape with your hands. Get the griddle really, really hot. Put on the burgers, turn
after 2 mins then give them another 3 mins, turning every minute. Let them rest for 2 minutes
before assembling the burger itself.
Essentials – a bun which isn’t too posh, cheese, sliced pickle, fried onions, salad leaves,
fresh tomato, ketchup, American mustard.
