Diary and Notes

Visitors! Aliens from another world (Wales) have descended upon us. They look like us, talk like us, but if you watch the David Icke video (right) you'll see that things are not always as they seem. Beware. David has a serious message here and needs to be taken seriously. Aliens are everywhere, creeping into our society and moving around looking like us but really very different*.

So we have visitors, Toni's brother and his two daughters, plus his partner and her daughter. It's gone girl crazy here. Poor Olias and me were massively outnumbered - hide, run away, take refuge.

So I did what I always do when hordes turn up - cook them something to eat and try not to get in the way. It's a sound policy and has served me in good stead for many years.

So today I made a pretty standard Tex-Mex mix - only I had to cook the meat separately from everything else as one of the aliens was a vegetarian. Yes, not only are we being manipulated from above by shape shifting reptiles from outer space, but some of them don't even eat meat. Bastards.

The food was pretty good and almost nothing was left after they slurped it all up with their retractable proboscises. Satiated and full of beans they departed in their space vehicle (I think it was a Renault) back to their mother ship hovering above us (a Premier Inn near Trafford Park).

I think they are returning tomorrow to feast again. Damn this cooking skill, if the food was awful they would have buggered off to a Beefeater or something similar, now I've an army of girls again - and more vegetarian troubles to deal with.

    Ingredients*

    Beans
    100g Dried Haricot Beans
    1 TBSP Oil
    1 Onion
    2 Cloves Garlic
    1 tsp Cumin
    1 tsp Oregano
    ½ tsp Smoked Paprika
    ½ tsp Chilli Powder
    Salt and Pepper
    Chilli
    300g Minced Steak
    150g Minced Pork
    1 Onion
    1 Clove Garlic
    ½ Red Pepper
    ½ Tube Tomato Purée
    1 Can Chopped Tomatoes
    1 TBSP Heinz Ketchup
    1 TBSP Oil
    Fresh Chillies
    Chilli Powder
    2 tsp Cumin Power
    1 tsp Dried Oregano
    1/2 tsp Cinnamon
    Fresh Coriander Leaves
    Black Pepper
    Salsa
    1/2 Onion
    1/2 Tomato
    1 Gherkin
    2cm Cucumber
    1/3 Red Pepper
    Squirt Tabasco Sauce
    2 tsp Tomato Ketchup
    Juice of ½ Lime
    Fresh Coriander



    Preparation

  • Beans: Cook the beans well beforehand. Soak for at least four hours then boil for ten minutes before turning the heat down and simmering until soft (about an hour). Drain.
    Fry a chopped onion in oil and add some minced garlic when the onion is soft. Add the spices and fry a little longer. Stir in the beans and a little water to help it all mix in. Bake for 20 minutes.
  • Chilli: Brown the beef mince (get it a little burned) in a pan with the oil then add the minced pork and cook this as well. All the time keep it moving so it doesn't form into lumps. Add the diced onion and cook until this is soft. Add the chopped pepper, chilli, chilli powder, paprika, cinnamon and minced garlic. Fry for about 5 mins then add the tomatoes, tomato puree, ketchup and a little water. Simmer gently for an hour or so, adding more water if it looks like its drying out. Add the cumin, oregano, some black pepper and if it needs pepping up a bit add some more diced chopped chillies.
  • Salsa: Chop everything finely and mix all the ingredients together.
